Panch phoron is a traditional Bengali whole spice blend containing five seeds in equal measure: fenugreek, cumin, kalonji (nigella), mustard, and fennel. Used whole never ground it is bloomed in hot oil or ghee as a tadka to begin cooking.

Panch phoron is an Eastern Indian whole seed blend used as a tempering agent in hot oil, it is never ground. Chinese five spice is a ground powder of star anise, cloves, cinnamon, Sichuan pepper, and fennel a completely different spice system from a different culinary tradition.

Each of the five seeds in this panch phoron comes from a single-origin Indian growing region not a blended commodity source. Single-origin ingredients deliver more distinct individual aromas, making the tadka noticeably more complex and fragrant than mass-market blends.
