Shelled nutmeg means the hard outer shell has been removed, leaving just the aromatic inner seed (jaiphal) ready to grate or use. Whole nutmeg still has its shell intact. Shelled nutmeg is more convenient no cracking required, while retaining the same aroma and potency.

Nutmeg (jaiphal) and mace (javitri) come from the same fruit of Myristica fragrans. Nutmeg is the inner seed; mace is the lacy red aril wrapped around it. They share warmth and woodiness but mace is more delicate and floral, while nutmeg is deeper and earthier.

Idukki nutmeg delivers a warm, woody, and subtly sweet aroma with rich essential oils noticeably more intense than pre-ground or commodity nutmeg. Its high hills origin in Kerala concentrates the volatile oils that make freshly grated jaiphal irreplaceable in cooking.
