Mahendragarh Black Mustard is grown near Mahendragarh in Haryana. These are rai seeds, the small, dark mustard seeds used in tempering, pickles, and everyday Indian cooking. They have a sharp, slightly bitter bite when whole, which softens and turns nutty once they hit hot oil.
