How to use Idukki cardamom (elaichi)

Elaichi works in both sweet and savoury dishes. Lightly crush two pods into masala chai. Add whole pods to biryani and pulao. Grind the seeds into garam masala. Use the powdered seeds in elaichi kheer, halwa and other festive sweets.

For the strongest flavour, crack the pod just before cooking. Use the whole pod in rice and curries, and the seeds alone in sweets and drinks. Whole pods keep their aroma far longer than ground cardamom, so grind only what you need.
